We finally had a nice day here the other day.  That’s the good news.  The bad news is that no one that I knew with sinus problems was able to enjoy it.  Oh, well!  For some reason the nice weather had me craving fresh blueberries and booze.  And since I’d already experimented with some blueberry beer a couple weeks ago, I decided to go for something a little different.  I had a fond memory once of a blueberry mojito and I opted to try to re-create it at home in my ghetto kitchen sans mortar and pestle.

We keep a little (and growing) list on the fridge of all the things that we can put on our wedding registry that we desperately need in the kitchen.  Last night it got a new entry as I mashed up the ingredients with a highball glass and the butt end of a cheese knife.  What I lack in proper kitchen equipment I make up for in creativity, I swear.

I am really bad with actually following recipes so here is a general one for mojitos adapted to feature blueberries:

Blueberry Mojito
(adapted from Cocktail Times)

Ingredients:

  • – 1 1/2 oz light rum
  • – 1/4 oz fresh lime juice
  • – 8 mint leaves
  • – 8 fresh blueberries
  • – 1 tsp sugar
  • – Club soda
  • Garnish: lime slice and mint sprig

Basically you take your fancy mortar and pestle and mash up the mint, limes (I keep the wedges whole and throw them in there after I’ve squeezed the juice) and blueberries.  Add them to your tall glass, plus booze and ice and top off with club soda; stir.  For this particular adaptation, since the boyfriend was sick, I used diet ginger ale and topped it all off with a splash of peppermint schnapps to make up for the lack of mortal and pestling.  I know;  I cheat.

Voila!  Instant summer!
